When I was initially diagnosed a coeliac I visited all the local health food shops and bought everything I could find that had ‘Gluten Free’ written on it. That was great while I was so desperately hungry, but once my health improved I became a little more choosey and quickly grew tired of the boring food on offer. When I looked around for cookbooks to make what I felt like eating there didn’t seem to be any that offered stylish, inviting recipes that I’d want to try, let alone consider serving up to guests.

I’ve also found that non-coeliac friends — often fabulous cooks — become overwhelmed at the prospect of cooking for me. While this cookbook is suitable for those following a gluten free diet (that is, with no wheat, oats, barley or rye), it’s also perfect for their friends who have no idea what to make when faced with a non-wheat-eating guest.

I’m not a professional cook, just a hungry coeliac who’s found that with a positive attitude and some lateral thinking food has become a pleasure again, not an obsession. Gluten free and easy is a compilation of my favourite recipes, it’s the food that I’ve served my family and friends over the last ten years. RR
